Rainbow and unicorn foods having a bit of a moment, iffffff you haven’t noticed. I suppose kaleidoscopic foods have always been cool, we’re just a little more vocal about our love these days.
Guys, lets make the next trend be kitty foods. By which I don’t mean we all dive into cans of Meow Mix and start instagraming carefully styled bowls of Friskies Seafood Splendor. One of the reasons that rainbow foods are so awesome is that looking at a bright, starburst plate just makes it more fun to eat so you’re inevitably more satisfied. They’re also fun to make, slicing up bits of color here and there.
And like our mamas always said, the more fresh color is on your dish, the healthier it is.
So….fun to make, fun to eat, and healthy? Yup. That’s a win.
And yes, those are blueberries and strawberries mixed up in there. It’s not weird, I promise. You’ve had fruit salsas, right? Tiny cubes of mango and raspberry mixed up with the cilantro and pepper? This is pretty much the same thing. It’s really really really good. Especially the blueberries. I have no idea why blueberries taste so awesome in savory dishes, they just do.
I was gonna put a little pineapple in there too, but the one I’d purchased was weirdly dry and not sweet in the least. What a rude pineapple. I skipped the cilantro too because it got kinda wilty. That one was my fault. I get overzealous when purchasing produce and then it will sometimes go bad on me. How many of y’all can relate? 🙋 🙋 🙋
Speaking of which, Kenji over at Serious Eats has a great guide to keeping herbs fresh longer. It works quite well, y’all should go check it out. Another reason my cilantro went bad is that I got lazy and just shoved it in the crisper instead of storing it a la Kenji.
If you’ve had a long week and thus are feeling lazy as well, you very much need this dish for dinner. All you do is just chop chop chop some veggies and throw em in a bowl with some beans. Too easy. Top with your favorite salsa, pour yourself a cold one, and dig in.

Rainbow Vegan Burrito Bowls
makes 2 hearty servings prep time: 10-15 min
- 1 can of black beans, rinsed and drained
- 1 cup of fresh strawberries, halved
- 3/4 cup blueberries, fresh or frozen
- 1 scant cup grape tomatoes, halved
- 1 jalapeno, thinly sliced
- 1/4 of a purple onion, thinly sliced
- 1 big fat yellow bell pepper, thinly sliced
- 3 carrots, cut with a julienne peeler
such as the OXO Good Grips Julienne Peeler
Divide all ingredients evenly among two bowls. Serve with your favorite hot sauce, crunchy tostadas, and lots of love.
