The Very Best Peanut Butter and Jelly Cookies (and they’re gluten free and vegan!)

These amazing peanut butter and jelly cookies only have 6 ingredients. Ready in 30 minutes, including baking time. Try not to eat them all at once. yum!

Oh gosh, these peanut butter and jelly cookies are so awesome that I don’t know where to begin.

Well, let’s begin with that it’s Monday (bleh!), but that all things Monday can be cured with all things cookie. And all things cookie can be enhanced with cat-on-lap.

I have a small confession to make: these cookies have no peanut butter. Whaaaaa? The deep peanut butter flavor comes from roasted salted peanuts.  And as you can tell, there’s no jelly in there either. The jelly flavor comes from blueberries!

Frozen blueberries, to be precise. They’re one of my favorite ingredients in both savory and sweet recipes. I hardly ever use fresh fruit in baking because when there’s the fresh stuff around, I like to eat it as-is.

Let’s go back to talking about the peanuts for just a sec. Roasted salted peanuts are an ingredient that I’ve been playing around with lately, to some success and some failure.

But clearly, these are on the success side. I shelled the peanuts myself because it was much cheaper that way, and because I actually like the act of shelling peanuts. You can absolutely used canned nuts if you prefer.

They other ingredients beside peanuts and blueberries are bananas, oats, cinnamon, and brown sugar. I did want to make these refined-sugar free, but I thought that using maple syrup might make them too sticky and hard to work with. So brown sugar it was, but it’s only a 1/2 cup. Oh! I almost forgot. Happy (late) Mama’s day to all the moms out there! 😙😙 😙 😙I’m just a cat mom right now, but I’ve been getting baby fever like mad lately.  Especially yesterday with all the mom pics all over social media. Which is kind of funny because I used to think that I really didn’t want kids. And if I did have kids, they would have to be adopted. That part hasn’t changed. I still want to adopt. We’re not financially ready for a kid just yet, but I wish we were! Whoops…this post suddenly got kinda serious. Sorry. Kind of.

the very best peanut butter and jelly cookies

prep time: 20 min   bake time: 10 min   yields: 20 cookies

  • 1 1/4 cup roasted salted peanuts
  • 1 cup old fashioned oats
  • heaping 1/2 cup mashed, very ripe banana
  • 1/2 cup brown sugar
  • pinch of cinnamon
  • 3/4 cup of frozen blueberries
  1. In a blender, pulse the oats and peanuts together until you get a coarse, slightly sticky grind — don’t get it get anywhere near the “this is peanut butter” stage
  2. Manually stir in the banana, brown sugar, and cinnamon.
  3. Roll out tablespoon sized balls and place on a cookie sheet — about 20 balls
  4. Flatten the balls with the bottom of a glass
  5. Press the blueberries into the flattened balls
  6. Bake at 350 for 10 minutes. Try not to eat them all at once!
